This is perfect on Vegetable Pizza with Potato Crust, or with any recipe that would benefit from the “umph” of feta. Makes 3/4 cup.

You’ll need:
1/2 lb firm tofu, cubed or crumbled
2 tablespoons olive oil
2 tablespoons water
1/4 red wine vinegar
1 teaspoon salt
1/2 tablespoon dried basil
1/4 teaspoon dried oregano
1/4 dried dill
1/4 teaspoon ground black pepper
The directions:
Mix all ingredients together in medium bowl. Marinade tofu for at least an hour before serving.
