Serve this delicacy on cold fresh-fruit pies, chilled pumpkin pie, or any favourite dessert.

You’ll need:
1 cup raw cashews or cashew pieces
1 cup water
1 cup sunflower oil
4 tablespoons maple syrup
½ teaspoon vanilla extract
pinch of salt

The directions:
Blend cashews and water to form a thick cream. Slowly add the oil in a fine stream. The cream will get very thick (if necessary, add addtional oil until desired consistency is reached). Blend in maple syrup, vanilla, salt. Chill and serve.
